Powdered Sugar on Everything

The beignet is a square of fried dough covered in powdered sugar, and it is perfect. It was brought to New Orleans by French settlers in the eighteenth century, and in the three hundred years since, nobody has found a reason to change the recipe, because there is no reason to change the recipe. You mix dough, you fry it until golden and fluffy, you bury it under a mountain of powdered sugar, and you serve it hot. That is it. That is the whole thing. And it is one of the most beloved foods in America.

Beignets are most famously served at Café Du Monde in the French Quarter, where they have been the only pastry on the menu since 1862. Three to an order, served on a paper plate, dusted with enough powdered sugar to create a small weather event every time someone exhales near them. The sugar gets on your shirt, your pants, your face, your phone, and the person sitting across from you. This is not a design flaw. This is the experience.

Simple, Hot, and Fresh

The genius of the beignet is its simplicity. The dough is basic — flour, sugar, eggs, milk, yeast — and the preparation is elemental: deep-fry until golden, dust with sugar, serve immediately. There are no variations, no seasonal specials, no artisanal reinterpretations. The beignet is what it is, and what it is has been good enough for three centuries.

The texture is the key. A properly made beignet is crispy on the outside and impossibly soft on the inside, the dough puffing up during frying to create an interior that is light, pillowy, and slightly chewy. The powdered sugar melts into the hot surface, creating a sweet crust that dissolves on the tongue. They must be eaten hot — a cold beignet is a sad thing, a reminder of what joy once tasted like — which is why Café Du Monde and every other beignet shop in the city serves them straight from the fryer to the plate.

The beignet is New Orleans at its most elemental: something simple, done right, served with generosity, and best enjoyed in the company of others. Get the powdered sugar on your shirt. It is part of the deal.
